Our Methode Cuvee Close is whole-cluster pressed, free-run juice fermented in temperature controlled stainless steel, secondary fermentation carried out in pressurized closed tanks, bottled 30 days after fermentation to retain fresh fruit profile., The aromatic profile of the wine is driven by a fresh tree fruit (sliced green apple, Bartlett pear), mandarin, and grapefruit with minor floral, flinty and mineral notes.

On the palate, the texture of the wine is defined by a snappy acidic attack that quickly fleshes out with an energetic lively mousse and balanced finish, although still dry. Compared to a Traditional Method sparkling wine, the Method Cuvee Close Sparkling wine provides a more focused fresh fruit and palate profile because it skips the autolytic ageing of the wine on the less, which typically add a baked bread, biscuit-like note to Traditional Method wines.
